God, what happened to my great plans for this MoFo? I had all of these great recipes I wanted to try, wonderfully low glycemic index recipes in the works, themes coming out of my ears.
And here I am, a day away from the finish, posting about a stir-fry.
This is really just a fridge-cleaner-outer kinda meal. Anything that was taking up valuable crisper drawer real estate went into the frying pan tonight. Half a can of water chestnuts? A handful of shiitakes? Six sad little grape tomatoes? Check, check and check. The sauce was an "oyster" sauce cobbled together from an old issue of Cook's Illustrated. It's okay, and relatively low-carb (as low carb as anything with vegetarian oyster sauce can be, anyway) but nothing to write home about.
And yes, that's barley on the side. I've been trying to find a rice stand-in for my Asian nights, and so far barley works as well as anything else without the resulting blood sugar spike (or the effort needed to make a yummy dish of cauliflower fried "rice"). It's not exactly authentic, but I'd rather go weird than have to explain about cultural authenticity while my doctor points an accusing finger at my blood glucose monitoring chart. Besides, I've always liked barley. So does Bean; she calls it "big rice" while she shovels it in.
I'm sorry about the listless post, y'all. I don't know what happened to my energy. I have something good planned for tomorrow, but I also have no idea if it will work out the way I've planned. We'll have to wait and see.
One more day!
